The Fifth Course features the works of lead writer Ashley Harris, a Toronto-based flight attendant, home cook and aspiring food critic. Ashley’s knowledge in the culinary arts spans that of over two decades. Her enthusiasm for independently researching global cuisine began at the age of eight, where she was introduced to Philippine, Italian, French and modern American cuisines. Her aspirations in attending culinary school was placed on hold due to a lasting passion in both music and the performing arts. However, Ashley, with her affection toward studying cultures around the world, had continued interest in researching cuisines and important historical factors that make a meal unique to its origin. To date, Ashley has studied over fifty global cuisines independently, paying great attention to key, staple ingredients and authentic preparation methods.
